Yesterday we had a little family gathering for my mothers birthday and for my birthday, which is next week. I was in charge of the food & dessert, I decided for baked vegetable risotto and carrot cake. I´m not a big cake person, but if there is one cake I do love, it is carrot cake. I found a vegan recipe on a Norwegian veggie food blog Vegetarbloggen.no

She is so inspiring when it comes to finding new ideas for food & desserts, with weekly updates. The carrot cake was an success, it tasted amazing. I followed the recipe, just changing the normal sugar with brown sugar, as I think it has a nicer flavour and a tiny bit healthier. I try to avoid sugar as much as possible,  but it is ok to make exceptions sometimes.
