I love asian inspired cooking, especially the combination of ginger chilli and soy sauce. This week I made this healthy asian style salad, which is great for dinner or for lunch.

I made it really simple and green this time around, as I mix it up after what I got in my fridge and what I feel like.

Soba Noodles – Kale – Avocado – Mushrooms –  Leek

Dressing

soy sauce – Apple Cider Vinegar – Ginger – Chilli – Coriander

Healthy, Sustainable & Delicious

Naked foods is a great concept here in Sydney. It is a grocery where you buy bulk, so you pick the amount that you need. There is no plastic bags, only paper bags or glass jars. Both recyclable and reusable. It is also mostly organic and healthy foods.

Most people probably dont even realise how much plastic they buy and throw away in their everyday life. “We” put everything in plastic, or it is already packed in plastic for us from the store. Reducing our use of plastic is not even a very difficult thing, it is simply making small changes to our everyday lifestyle.

In my lifestyle, it is those simple things like choosing a  Naked Food Store for certain products that I use a lot, therefore bringing the paper bags back when I need a refill of something.

Chose to do your weekly shopping all in one day, this way you make sure you bring reusable shopping bags, and your own old plastic bags for certain things you “have to” put in plastic. This way you keep better track of what you spend and you can be more sustainable.

Who does not love eating? I mean food is just one amazing thing we need to function. Making food that is sustainable, healthy and delicious makes it even more exiting! My ongoing healthy – sustainable – yummy – food mania will hopefully never end. Sharing it with other likeminded and  inspire you to try something different is just an great added bonus to my obsession.

This week I made couscous fritters, which is something I make every know and then, always adding or changing a few of the ingredients. I like changing it around so it does stay interesting to make over again.

Couscous is fast to make, cheap to buy and it is healthy to eat, which makes it a must in my sustainable food life. The fritters are a great for dinner, lunch or even as a side dish for your breakfast.

 pa201121Main ingredients to make fritters:

spices after your liking – oats – flour after your liking – chilli – garlic – couscous – sun dried tomato – olive oil

I added shredded carrot to make the fritters more flavourful.

Mix all ingredients – make sure you cook the couscous first. When mixed together,  leave them in the fridge for 30 min – make the fritters the size you prefer.

I pan fry / cook them with olive oil for about 20 min. This gives them a crispy outside and I like the flavour of olive oil.

Essential oils are pure magic, if you have not discovered it yet, now is the time.  I got interested in essential oils, as one of my co-workers was talking about it and praising it. I always look for alternative products, staying off the mass produced chemical infused brands. They might say on the packaging it is great for you, but over all there is always a chemical involved. Essential oils are natural oils from plants. Different oils have different benefits and fragrance, you can use it for everything.

Put it on your body as a natural perfume, or your hair. Blend it into a massage oil, use it for a body scrub, face glow, air freshener, sun burnt skin, anything you can think off! As said every oil has different benefits, so do your research and find out what benefits you are after, and then make the decision for which oils you prefer, or just get them all!

LAVENDER

My favourite right now is lavender. Lavender is perfect for stressful periods, find calm during yoga or meditation practise + the smell is amazing! It can be used with your facial oil/cream to reduce wrinkles, or mixed with your body oil/cream if you struggle with dry or irritated skin.

Hope you are ready for a new week, I´m having a busy time with uni, two assessments / presentations due this afternoon, can´t wait to get it done, so I can finally take a day off on Thursday.

I thought I would share different dinner /food recipe´s once a week, give you inspiration or ideas on delicious vegetarian & vegan options. Eating less meat is so important for making a more sustainable world, so making your meat-free meals more interesting and full of flavour and nutrition will make it so much easier for anyone who is not already a vegetarian/vegan, who might need some inspiration on how to adapt cooking with less meat in everyday life.

 This week I made a smoked brown rice & lentil stew, with potato chips and spinach.

pa101092 pa101090It is super easy to make and you dont need to many ingredients, just what you see above + your preferred spices & herbs. I used smoked paprika to get that smoky flavour, mustard, himalaya salt and peper. Basil & Parsley.

pa101101 Put the tomato´s, chilli, garlic, lemon, paprika and mustard in the blender, so it turns out to be a sauce/paste.

Slow cook the mushrooms, herbs and spices, before you add the cooked rice, lentils, tomato sauce and coconut cream.

pa101107 Let it slow cook until your potato´s are crisp enough.

Cooking is one of many favourite activities, it makes me really relaxed and happy. Most of my diet is a vegan or vegetarian diet, which is really easy and always full of flavour! I really want to share my food lifestyle with you guys, hopefully encouraging more people to pick up on a diet more plant-based, than meat-based. Get inspired. Cook more. Stay healthy, fit and on budget.

Living on a student budget, you cant always go for your first choice, I find it hard to compromise, but it just have to be done. I love pasta, almost to much, so this dish is a simple pasta dish full of flavour, and it is easy to do on a budget. I chose normal pasta this time, as it allows me to buy more veggies on the weekly budget.


Chick Pea – Zesty – Pesto – Pasta

PREPEAR:

Cut the garlic, the chilli and the broccoli into really small pieces. Drain and clean the chick peas. Cut the tomato´s into small squares, and mix it with a bit of olive oil and the fresh parsley.

COOK:

Lightly fry the broccoli, chilli, garlic and the chick peas with olive oil. Add the herbs you prefer, I used Italian mixed herbs, himalaya salt and pepper. Last you add the pesto and the lemon. Depending on how much pesto flavour and zest you prefer, add it as you tast.

FINISH:

drizzle some extra olive oil over the pasta, add the cooked ingredients, topping it with the fresh tomato-parsley mix and fresh spinach.

The raw detox I did last week was a really good week, filled with only fresh, healthy and delicious food, having a healthy lifestyle, without almost any dairy (milk products), meet or fish is really easy, as long as you are willing to spend some time cooking, adapt your routines and mindset and look for great food ideas to keep inspired to make meals free from meat. After the raw detox week, I´ve decided to do at least one raw salad for dinner every week, I´ve also made the super healthy berry smoothie bowl for breakfast almost every day.

– Recipe for the smoothie bowl –

2 spoons of oats, a cup of berries, 1/2 avocado 1/2 banana 1 Tsp cocoa powder, 1 tsp maca 1/2 cup of water, nuts, berries & cinnamon for topping.

– The salad this week –

chick peas – spinach – baby cos – seeds – toasted almond flakes – avocado – onion – olive oil – lemon – himalaya salt  – chilli – pepper & mixed herbs, we added a plain organic omelet on the side to make it more filling.

– Healthy vegan dessert –

It is the final day of our raw detox, it went surprisingly easy, after smoothie breakfast and salad lunch tomorrow I will make “normal” dinner again. Still be healthy but defiantly some pasta, cooked food and red wine will be on the meny. To celebrate the end of a great detox week, and the beginning of a new healthy week, I made my favourite healthy dessert for tomorrow, the coconut cream mousse, you have to do it. it is simply the best.

I try to stay away from dairy as much as possible, choosing coconut cream. There is so many other products that is so much better for us and for our planet than animal products, especially dairy.

I´m not a health fanatic, at least I tell myself that, I just simply believe we have so many great products out there that are healthy and delicious. So why go for the artificial and unhealthy choice, especially when there are options that is so much better for the environment and for you!?

To make the mousse, you simply need the coconut cream – put in the fridge for a few hours before using. 1/2 a teaspoon vanilla extract, 2-3 teaspoons cocoa powder (real cocoa powder without any added sugar or sweetener) and last if you are a strict vegan use agave, if not go for a organic honey. I prefer the honey flavour, as I make sure I buy real organic honey, of good quality. Cinnamon, berries or nuts of of your choice for topping.

Mentioned earlier this week, I said Jens and I was going to do a detox week, as we thought we did not have any important happenings or events to attend this week, with most of our friends out of town. I got my shopping list and week meny ready on Monday, then; we completely forgot about a friends birthday this Thursday. As he invited us out for a B-day dinner, we had to postpone our detox, starting tomorrow.

The shopping is done, meals for tomorrow is prepped and I´m ready for a fresh week, but first we will enjoy a few glasses of red tonight.

The Detox plan:

what we can eat/drink:

All vegetables and fruits – fresh uncocked

Beans, Lentils and chick peas

water and herbal teas

2 tablespoons of coconut yoghurt every day

Free range organic eggs – cooked is fine

herbs and spices (himalaya salt in moderation)

nuts and seeds unsalted

We are making our own twist to it, swapping the yoghurt for coconut yoghurt to avoid any dairy. Second Jens is not having any meat (I dont eat meat), making it as green as possible.

It is Monday again, yoga is done, uni assessments are being worked on and Jens suggested we´d do a detox week. As I´m usually the big health freak in this relationship, I thought it would be a great idea, and I have not done one in to long. As we both live very healthy already, we decided to do one that is not based on juicing, but a combo of juice/smoothies – raw salads/vegetables and nuts/seeds. No alcohol during the seven days detox is probably going to be the hardest for us, as we both love red wine on a weekly basis.. We are starting on Wednesday, have a few things in the fridge we need to finish first. In the meantime I´m enjoying my lemon-ginger kick with some inspirational reading (sorry book is in Norwegian) The book is a great inspiration, it gives you positive energy, makes you appreciate every little thing and keep you working towards what you want.
