I love exploring, adventure new challenges and activities, routine can be so deadly, so to keep up new challenges here and there is important to live a happy healthy life. This weekend we went out of Sydney, to a wakeboard park, which was great! I have not wake-boarded in years so I could feel the nerves and adrenaline the first couple of rounds, which is a great feeling. Such a fun day, out being active and doing something out of the normal.

Happy Monday everyone, hope you had a fabulous weekend, reminding yourself that you are gorgeous and perfect just the way you are!?

Something I´m really exited about lately, is that the focus on eating less meat and dairy are increasing, and vegetarian and vegan products are becoming much easier for consumer to purchase.  For those who do pay attention and care about global warming, you would already know that the agriculture industry is one of the worst industries for our planet and health. So eating more plant-based is really important, even if you do not wanna be a full time vegetarian or vegan, you should lower your meat consumption.

I´ve been vegetarian for over 4 years, and the last six months almost 100% vegan. Which means I barely would eat anything from animals. As a healthy confident lover of eating plant-based I thought I would share some key food products with you guys that I believe are essential to live healthy on a diet without meat. As I prefer my food to be as clean and unprocessed as possible I do not really have a lot of “fake meat” in my diet, however if you are slowly trying to adjust to a more plant based diet, I do really recommend that as a subside to meat.


MY FOOD MUST HAVE`S


All sort of beans, chick peas & lentils

Kale, broccoli  spinach & avocado

Couscous, brown rice, soba noodles & pasta

Good quality rye bread

   Oats, chia seeds, nuts and seeds

B12 tablets

Non dairy milk – oat milk is my favourite followed by almond

bananas


Also all other vegetables and fruits, I find it important to eat all sorts, to keep the food interesting and varied, to make sure you cover all areas of needed nutrition, also with the occasional vegetarian “meat” burger og sausages.

I know a lot of sceptics think you will not get enough nutrition living on a plant-based diet, that you get sick and are scared of changing your food habits. I can honestly say I´ve never had any problems with my health or with sickness the last 4,5 years. I have not lost or gained weight, but as I´ve always been small, I´ve made sure to eat more to maintain a healthy weight. I have not lacked of any thing, besides low on B12 for a little period, before I started taking tablets for that, apart from that I feel so AMAZINGLY HEALTHY.

Your food shopping becomes much cheaper or you can purchase much more food for the same price as when you would include meat in your purchases.

Hope you are having a good week so far, maybe a few more days of work or exams before you start the holidays?

I want to share with you a super easy breakfast smoothie, packed with all goodness giving your body a great start to the day. As we all know a good breakfast is so important to prepare your body and mind for a good productive and active day.

My breakfast smoothie is quite rich and deep in flavour as I´m using a few key spices, spices that have some really health benefits.

Cardamom – rich of vitamins, dietary fibre & proteins

Turmeric –  Fights off bacteria and infections, preventing alzheimers and cancer, a great spice for flavour and for health

matcha – full of antioxidants, loaded with energy and  it detoxify´s the body, which is just a few benefits

Oats – packed with fibres and proteins, minerals and vitamins

Chia Seeds – omega, protein and fibres – a must for you on a vegetarian or  vegan diet.

Berries or fruit of your choice – I usually go for blueberries or raspberries

On days I don´t have to rush off anywhere Ill make it into a smoothie bowl, topping it with fruit, seeds and what I have available. On a busy morning I´ll drink it straight from the jar, its super great as a on the go breakfast.

My coconut obsession is unreal, if you know me well, you know what I´m talking about.

I swear to it.

Coconut oil is so amazing for your body and skin, for your inside and the outside.

Lately I´ve started making my own coconut oil blend, with only three simple ingredients that makes the oil just so much better.

Wanna share the recipe for a really delicious iced almond latte with you guys!

I made this the other day, and it so delicious and super healthy.

All you need is

Almond Milk, Dates, Almonds, Cinnamon, Turmeric & Cocoa spice

Put it all together in your blender, if you don´t want the bits of almonds and dates that does not blend just strain the bits out.

I love asian inspired cooking, especially the combination of ginger chilli and soy sauce. This week I made this healthy asian style salad, which is great for dinner or for lunch.

I made it really simple and green this time around, as I mix it up after what I got in my fridge and what I feel like.

Healthy, Sustainable & Delicious

Naked foods is a great concept here in Sydney. It is a grocery where you buy bulk, so you pick the amount that you need. There is no plastic bags, only paper bags or glass jars. Both recyclable and reusable. It is also mostly organic and healthy foods.

Most people probably dont even realise how much plastic they buy and throw away in their everyday life. “We” put everything in plastic, or it is already packed in plastic for us from the store. Reducing our use of plastic is not even a very difficult thing, it is simply making small changes to our everyday lifestyle.

In my lifestyle, it is those simple things like choosing a  Naked Food Store for certain products that I use a lot, therefore bringing the paper bags back when I need a refill of something.

Chose to do your weekly shopping all in one day, this way you make sure you bring reusable shopping bags, and your own old plastic bags for certain things you “have to” put in plastic. This way you keep better track of what you spend and you can be more sustainable.

Who does not love eating? I mean food is just one amazing thing we need to function. Making food that is sustainable, healthy and delicious makes it even more exiting! My ongoing healthy – sustainable – yummy – food mania will hopefully never end. Sharing it with other likeminded and  inspire you to try something different is just an great added bonus to my obsession.

This week I made couscous fritters, which is something I make every know and then, always adding or changing a few of the ingredients. I like changing it around so it does stay interesting to make over again.

Couscous is fast to make, cheap to buy and it is healthy to eat, which makes it a must in my sustainable food life. The fritters are a great for dinner, lunch or even as a side dish for your breakfast.

spices after your liking – oats – flour after your liking – chilli – garlic – couscous – sun dried tomato – olive oil

I added shredded carrot to make the fritters more flavourful.

Mix all ingredients – make sure you cook the couscous first. When mixed together,  leave them in the fridge for 30 min – make the fritters the size you prefer.

I pan fry / cook them with olive oil for about 20 min. This gives them a crispy outside and I like the flavour of olive oil.

Essential oils are pure magic, if you have not discovered it yet, now is the time.  I got interested in essential oils, as one of my co-workers was talking about it and praising it. I always look for alternative products, staying off the mass produced chemical infused brands. They might say on the packaging it is great for you, but over all there is always a chemical involved. Essential oils are natural oils from plants. Different oils have different benefits and fragrance, you can use it for everything.

Put it on your body as a natural perfume, or your hair. Blend it into a massage oil, use it for a body scrub, face glow, air freshener, sun burnt skin, anything you can think off! As said every oil has different benefits, so do your research and find out what benefits you are after, and then make the decision for which oils you prefer, or just get them all!

LAVENDER

My favourite right now is lavender. Lavender is perfect for stressful periods, find calm during yoga or meditation practise + the smell is amazing! It can be used with your facial oil/cream to reduce wrinkles, or mixed with your body oil/cream if you struggle with dry or irritated skin.
