Hi lovelies, hope you are having a great weekend, don´t let life get in the way of your dreams.

If someone told me four years ago that I would be studying fashion design and branding on the other side of the planet ( Australia), living in a hostel for over a year, working on a lime farm picking limes, get a phone call about my grandmothers sudden death, not being able to see her one last time or be on Australian TV, feel extreme sadness, happiness, loneliness, excitement among so many other life changing experiences; I don´t know if I would have believed it.

Our lives are so short that it´s not worth living the life expected of you, dream crazy and let the unexpected happen.

Dream Crazy & Live Big

– Good day lovelies –

Wanna share the recipe for a really delicious iced almond latte with you guys!

I made this the other day, and it so delicious and super healthy.

All you need is

Almond Milk, Dates, Almonds, Cinnamon, Turmeric & Cocoa spice

Put it all together in your blender, if you don´t want the bits of almonds and dates that does not blend just strain the bits out.

Happy Sunday everyone, I just finished another weekend of work, game night, good wine and a quick healthy sustainable burger dinner last night. Jens and I were both in the mood of not having to cook, as usually I love cooking I needed a day off after a busy and very productive week.

I love the fact that people are becoming more aware of the massive food issue we are facing, and are really making changes to their lives, restaurants and cafes are approaching a more sustainable food way. In Sydney plant based food options are really great, making it so much easier to not eat meat.

My favourite burger placed is called Soul Burger and it is all plant based delicious burgers, even hard core burger lovers will approve of these burgers.

I love asian inspired cooking, especially the combination of ginger chilli and soy sauce. This week I made this healthy asian style salad, which is great for dinner or for lunch.

I made it really simple and green this time around, as I mix it up after what I got in my fridge and what I feel like.

Using soba noodles, kale and avocado gives your body plenty of nutrition.

Ingredients for Salad

Soba Noodles – Kale – Avocado – Mushrooms –  Leek

Dressing

soy sauce – Apple Cider Vinegar – Ginger – Chilli – Coriander

Healthy, Sustainable & Delicious

Can I justify it? I´m not sure. But I decide to let go and live in the moment I´m in right now, not hold on to worries or mistakes of the past.

One thing that I´ve been feeling awful about is my previous purchases of new leather goods. I do not buy any leather goods new anymore, secondhand though, I do. I do still use my leather goods that I did not buy secondhand, simple because what is done is done, I rather live in this current moment, and look forward.

I can criticise myself as much as I like, make myself feel bad for decisions I have made, but it will not change the past anyway.

The beauty of life is that we will always make mistakes and you got to choose if you will learn from them or not. I choose to learn from the things that I see as mistakes in my life. We all have our own demons to deal with, yours different than mine. Hopefully you can manage to let go of the worries of the past and live in the moment.

Lets Live In The Moment

Naked foods is a great concept here in Sydney. It is a grocery where you buy bulk, so you pick the amount that you need. There is no plastic bags, only paper bags or glass jars. Both recyclable and reusable. It is also mostly organic and healthy foods.

Most people probably dont even realise how much plastic they buy and throw away in their everyday life. “We” put everything in plastic, or it is already packed in plastic for us from the store. Reducing our use of plastic is not even a very difficult thing, it is simply making small changes to our everyday lifestyle.

In my lifestyle, it is those simple things like choosing a  Naked Food Store for certain products that I use a lot, therefore bringing the paper bags back when I need a refill of something.

Chose to do your weekly shopping all in one day, this way you make sure you bring reusable shopping bags, and your own old plastic bags for certain things you “have to” put in plastic. This way you keep better track of what you spend and you can be more sustainable.

Who does not love eating? I mean food is just one amazing thing we need to function. Making food that is sustainable, healthy and delicious makes it even more exiting! My ongoing healthy – sustainable – yummy – food mania will hopefully never end. Sharing it with other likeminded and  inspire you to try something different is just an great added bonus to my obsession.

This week I made couscous fritters, which is something I make every know and then, always adding or changing a few of the ingredients. I like changing it around so it does stay interesting to make over again.

Couscous is fast to make, cheap to buy and it is healthy to eat, which makes it a must in my sustainable food life. The fritters are a great for dinner, lunch or even as a side dish for your breakfast.

 pa201121Main ingredients to make fritters:

spices after your liking – oats – flour after your liking – chilli – garlic – couscous – sun dried tomato – olive oil

I added shredded carrot to make the fritters more flavourful.

Mix all ingredients – make sure you cook the couscous first. When mixed together,  leave them in the fridge for 30 min – make the fritters the size you prefer.

I pan fry / cook them with olive oil for about 20 min. This gives them a crispy outside and I like the flavour of olive oil.

Monday again, let´s start the week motivated and positive. I´m starting mine with sharing this amazing new company with you guys!

A sustainable lifestyle is a really important matter, that I´m very passionate about, something I´ve had a strong focus on for the last 5 -6 years. When I started my Branded Fashion Design Bachelor I became even more aware of the negative impact fashion has on our planet, animals & the people involved in the industry.

One of the reason I decided to chose a degree within fashion design & branding is because I have a real passion to make a better future, I love individual style and clothing and I do believe it is still possible to change peoples value system and make a more environmental friendly fashion future.

A few months back I came a cross this new Norwegian Company that is launching this Autumn. They are called FJONG, and they are encouraging people to buy less and supporting a more sustainable fashion industry. They are offering a great service that will double or triple your wardrobe, in a sustainable way! You can simply rent or rent-out your wardrobe via FJONG. Need a dress for a special occasion? Going on Holiday and want something “new” to wear? FJONG makes it all possible! We all buy to much, especially fast fashion, but the truth is most of our wardrobe is just hanging there in the closet. With FJONG you can make money putting your clothes up for rent, make someone happy, make yourself happy having that beautiful handbag you wanted. Never grow tired of your clothes and most important, stop the extreme buying habits we have.

Only my small country of about 5 mill people, our clothing consumption have the same pollution rate as 800.000 cars?! That is such a high number, which needs to go down. Our shopping and lifestyle habits are slowly killing our planet, it has to stop. What FJONG is doing is great, it has made me even more exited about moving back to Norway next year, so I can join the FJONG movement. In the mean time I´m keeping my shopping very limited, purchasing second hand and ethical as much as possible. Are you living in Norway? Time to become a “Fjongster”.

Happy Tuesday everyone!

Hope you are ready for a new week, I´m having a busy time with uni, two assessments / presentations due this afternoon, can´t wait to get it done, so I can finally take a day off on Thursday.

I thought I would share different dinner /food recipe´s once a week, give you inspiration or ideas on delicious vegetarian & vegan options. Eating less meat is so important for making a more sustainable world, so making your meat-free meals more interesting and full of flavour and nutrition will make it so much easier for anyone who is not already a vegetarian/vegan, who might need some inspiration on how to adapt cooking with less meat in everyday life.

 This week I made a smoked brown rice & lentil stew, with potato chips and spinach.

pa101092 pa101090It is super easy to make and you dont need to many ingredients, just what you see above + your preferred spices & herbs. I used smoked paprika to get that smoky flavour, mustard, himalaya salt and peper. Basil & Parsley.

pa101101 Put the tomato´s, chilli, garlic, lemon, paprika and mustard in the blender, so it turns out to be a sauce/paste.

Slow cook the mushrooms, herbs and spices, before you add the cooked rice, lentils, tomato sauce and coconut cream.

pa101107 Let it slow cook until your potato´s are crisp enough.

Today is International Day of Peace, which means what exactly?

There are millions of people out there who will not have any sense of peace on this particular day, cause their lives are filled with poverty, war, abuse or anything else that does not creates peace.

My life however is so far from any of those scenarios, I can´t even imagine how it feels. So what does this day mean to me?

It gives me the feeling of real gratefulness, towards everything in my life, even the bad things, cause the bad things maybe more than all the great things, shapes you as a person. Grateful for feeling safe, being able to to be who I am and what I want. Being able to use the peace in my life, making someone else´s life a better life. It also makes me sad for everyone who never will experience peace, and my thoughts and good energy will be dedicated to these people, hopefully you will do the same, as we can slowly make a better and more peaceful life for others.

A second thing we can all do, is support a case or someone/ a business that is making a difference to improving the lives of others.
